If I were to weigh how much of that marzipan I ate during my 23 years in Europe it would probably come close to 893 pounds. Lübeck is also the home of Niederegger Marzipan, probably the most famous marzipan in the world. It has been a UNESCO world heritage site since 1987. The Holstentor is Lübeck’s most famous feature, a Brick Gothic construction from Medieval times. We visited it frequently as a family and later as a young adult I once took on the challenge and biked 72 miles from Rendsburg to Lübeck in the middle of summer, a memory I’ll never forget! Just a few hours north of where I grew up in Stuttgart is the historic town of Lübeck, world famous for its marzipan. Marzipan can be found everywhere in Germany. Look no further, this is simply the BEST homemade marzipan recipe! The way around this? Make your own! The good news is that marzipan and almond past are also super easy and quick to make and now you can make your own anytime, anywhere. Well, not really, but I wouldn’t have protested had my parents tried :) Marzipan is incredibly delicious. Growing up in Germany, home to the world’s most famous marzipan, I was practically raised on this stuff. It’s okay if you see small lumps of egg whites in there, they are supposed to be there, you just don’t want huge chunks of egg whites in the soup, unless that’s what you wantġ3. The milk will thicken (because of the rice). Add rock sugar pieces and pinch of salt, and stir over low heat. Transfer the milk into a heavy-bottom potĩ. I keep them and cook them into a porridgeĨ. I use Vitamix, which is a very powerful blender and it blends them really smoothlyħ. You can leave the skin on (for extra fiber), the end result will be slightly brownish soup, if you are okay with thatĤ. If you plan to soak overnight, keep them in the fridge especially if the weather is warm where you areģ.The American almonds I used still have skin-on and they are easily peeled off after soaking. Soak the almonds and rice in water, enough to cover them, for at least 2 hours up to overnight. Rinse the glutinous rice in water and discard water.

It won’t have that floral sweet scent, but will still have the same creaminess and taste. You can also use just American almond to make this dessert. If you want to use a combination of sweet and bitter almonds, the weight ratio is 4:1 for the best result.
